ACTIVITY DESCRIPTION
**ROUTE + WORKSHOP + SHOW COOKING + LUNCH**
Cantabria’s extraordinary landscape and natural diversity create a wide range of habitats, resulting in an impressive richness of wild mushrooms.
Within a relatively small area you can find holm oak forests, oak woods, beech forests, pine forests, and extensive meadows, forming the perfect environment for a great variety of mushroom species. In addition, mushroom foraging in the region has historically been very limited, meaning there is very little pressure on this natural resource. Combined with the frequent rainfall during the most favorable seasons—spring and autumn—Cantabria truly becomes a **mushroom lover’s paradise**
.The experience begins at a previously agreed meeting point, from where we will head into the forest for a guided mushroom walk. During this easy and enjoyable hike, we will discover different species of mushrooms and fungi, learning the key features for their correct identification and understanding how to distinguish them from potentially toxic species.
This is not a mass harvesting activity; only the specimens needed for the identification workshop will be collected. The workshop is the heart of the experience, where participants will learn essential techniques to correctly differentiate species. We will use dichotomous keys and identification guides to accurately recognize each mushroom.
Depending on the weather and conditions, the workshop will take place outdoors or in a specially prepared covered space.
To make the experience even more special, it concludes with a **cooking workshop and live show cooking demonstration led by Antonio Vicente, a renowned Cantabrian chef. Finally, to end the day on a high note, participants will enjoy a complete mushroom-themed menu, prepared during the activity itself. 🍄🍽️
